Ocha / Japanese Green Teas

Japanese Green Tea / OchaGreen tea (Ryokucha) is ubiquitous in Japan and therefore is more commonly known simply as "tea" (ocha). It is even referred to as "Japanese tea" (nihoncha) though it was first used in China during the Song Dynasty, and brought to Japan by My?an Eisai, a Japanese Buddhist priest who also introduced the Rinzai school of Zen Buddhism. Types of tea are commonly graded depending on the quality and the parts of the plant used as well as how they are processed. There are large variations in both price and quality within these broad categories, and there are many specialty green teas that fall outside this spectrum. The best Japanese green tea is said to be that from the Yame region of Fukuoka Prefecture and the Uji region of Kyoto. Shizuoka Prefecture produces 40% of raw tea leaf.

How About Sashimi?

Sashimi is a Japanese delicacy. It primarily consists of very fresh raw seafood, sliced into thin pieces, and served with only a dipping sauce (soy sauce with wasabi paste or such condiments as grated fresh ginger, or ponzu), and such garnishes as shiso and shredded daikon radish. Dimensions vary but are typically about 2.5 cm (1") wide by 4 cm (1.5") long by 0.5 cm (0.2") thick.

The word sashimi means "pierced body", This word had used from Muromachi period, withheld the word Cut, the culinary step, by Samurai for inauspiciousness. This word may derive from the culinary practice of sticking the fish's tail and fin to the slices in identifying the fish being eaten.

What is Sushi?

Sushi is a Japanese dish consisting of cooked vinegared rice which is commonly topped with other ingredients, such as fish or other seafood, or put into rolls. Sliced raw fish by itself is called sashimi, as distinct from sushi. Sushi that is served rolled inside or around dried and pressed sheets of seaweed (or nori) is makizushi. Toppings stuffed into a small pouch of fried tofu is inarizushi. A bowl of sushi rice with toppings scattered over it is called chirashi-zushi.
